Question
A blast freezer uses high-velocity cold airflow to rapidly remove heat from products. Fans push air at 5 to 10 metres per second across the load. This breaks up the warm boundary layer around each item, speeding heat transfer. Products freeze in 1 to 4 hours instead of 12 to 24 hours in standard freezers.
Did you know?
A blast freezer relies on airflow as much as temperature. Powerful fans force very cold air around the product so heat leaves quickly and evenly instead of becoming trapped near the centre.
